The Pomegranate

Pomegranates are a new super food:  They are high in vitamin C and potassium, a great source of fiber, and low in calories. This fruit is not only delicious, but one of the healthier foods you can eat!
Pomegranate juice is high in three different types of polyphenols, a potent form of antioxidants. The three types - tannins, anthocyanins, and ellagic acid - are present in many fruits, but fresh pomegranate juice contains particularly high amounts of all three. The antioxidants are credited with helping in the prevention of cancer and heart disease.
So, whether you snack on fresh pomegranate arils (seeds) or drink the juice, feel guilt-free as you enjoy each delicious mouthful- you're doing your body a favor! 


After viewing this post by Sheena I was determined once again to buy a Pomegranate! (the first time I was inspired I allowed it to rot on my table...but I wan't afraid of it...really) so today while shopping I picked up a couple came straight home and began cutting, soaking, peeling (and tasting) and decided I LOVE pomegranates! It's such an interesting, odd, yet addicting "seed". I used Sheena's method of dunking them in a bowl of water and gently popping the seeds out using my fingers, however, I read that there is another way involving beating the pom with a spoon? I'll need to look into that for next time. 

So my pictures aren't as great as Sheena's. okay so they're pretty much a J.O.K.E compared to hers but I documented them anyway and even though I lack a fancy camera and err photo skills, this is still my blog so here it goes,

This is the fun part! The white "pulp" stuff has a Styrofoam-like consistency!  

These babies are yummy just like this but I heard they're fabulous in hot cereals and yogurts too, we'll see in the morning!

RUN

Running...something that I have always wanted to do (like as in not just once but actually be a runner) but I usually stop after day one-ish. So I am hear to say 5K I am committed to you! I will run you and finish even if I am just barely rolling across that line! We're looking at March, this will give two months of training which will look something like this, did I mention my hubby is running too? SO EXCITING!

Speaking of my husband I want to take a moment and brag about my guy! So he's an electrician but not just any electrician as of yesterday at approximately 6pm he is a licensed Journeyman Electrician!! Passed that stupid test with flying colors! These have been his study hours for the past month:
  • 3:30am (yes AM before work)
  • during his lunch breaks 
  • two-three hours after dinner every day 
  • plus when he was able to on the weekends! 
He's worked hard and earned it! Thank you God for your faithfulness and for this wonderful guy, I love him so!

we're back

cannot believe it has already been three months since we moved back to the big city, time sure does fly! well since being back i can't say a whole lot of excitement has gone on. newts been working some pretty ridiculous hours, seven days a week so that doesn't leave for too much explore time and not only that but it has been so stinkin hot here. no joke.

we did however managed to squeeze in a day trip to the beach. not exactly the crystal clear waters of jamaica or the beautiful mountains in Colorado but there was water and that my friends is a nice thing considering the heat around here lately.


because we didn't exactly think things through as far as heading to the beach during rush hour...here's what we got


we really are intelligent people...no?

since being back home, we have had plenty of family time! since both newts family and my family live here we usually end up seeing someone throughout the week which has been a nice treat considering just three months ago we were about four hours away

there is a story behind this trip to Colorado that we took November 2010 and it's pretty much about how we want to live there oh so badly, so we took a short trip to "scope it out" and fell in-love!









you see...we're from Houston, TX and pretty much have lived here our whole lives, land of traffic, trash, mean people, horrible weather plus tons of humidity. ok so maybe not everyone is mean but the weather thing, that parts true. we're so ready to experience nice, beautiful weather and yes even all that snow! but mainly the beauty and adventure that a state like this has to offer. maybe one day.
